Organic AECHT [KIMMEL] - Caraway | Hydrolat | Dill
 
The meagre soils and harsh climate on the plains of the Swabian Alb give the caraway plants from that region a special aroma. As the name indicates, meadow caraway is a herb that can be found in MeadowFruit orchards. We get it from Wilfried Holder who grows in on the Swabian Alb. The potential of caraway has been known for a long time, people gathered it to use in food preparation and for healing ointments. Caraway is rich in essential oils and with its intense but mild flavour it rounds off the alcohol free Aecht Kümmel.
 
Aroma: green notes of dill, green bell pepper, and fresh cucumber. Following full, ethereal notes of cumin unfold. Wrapped in warm hints of honey and soft chamomile blossom. Delicate, fresh nuances reminiscent of mint and lemon provide lightness and finesse.
Taste: With the full, aromatic notes of caraway comes a delicate, sensual taste of fine honey. Not sweet, but captivating in the mid-palate and finish, the defining notes of powdery minerality and tannins are found. The interplay between soft, ethereal notes and tension-filled freshness makes you crave more.
Food pairing: light, poached fish dishes with pan fried vegetables like fennel and carottes, with hard cheese, oriental dishes spiced with cumin like falafel, humus or grilled aubergine
 
 
 
Organic [dʒɪn] BITTER - Juniper | Hydrolat | Bitter
 
Not just alcohol can be distilled, but hydrolats, too. In our distillery, botanicals are combined with water and, in an elaborate process, fragrance and taste are refined and captured in water based hydrolats. Without preservatives, as alcohol free gin with bitter herbs from our region.
 
Aroma: The flavours burst out as soon as it is poured into the glass. It starts with lemony freshness, closely followed by ethereal juniper. The main flavour of bitter orange sets a central accent. From here, the finely resinous and spicy woody notes take us back to the Swabian Alb and the juniper bushes. It continues with floral notes that are reminiscent of lavender and have an ethereal effect. Heading south, the gin leaves us smelling bitter, with fruity, ripe yellow fruits such as apricot and juicy mirabelle plums.

Taste: The gin bitter already gives it away in its name. The initial fruity, sweetish prelude is followed by a strong, flavoursome middle section. The bitter flavours play a key role here. The flavour is reminiscent of Campari due to the tart notes of bitter orange, but much finer and more ethereal due to juniper and Douglas fir. In the very long aftertaste, the fine cucumber flavour hits the line where you want to try it again to taste even more of the aromas.

The de-alcoholisation of our cider takes place in-house through vacuum distillation at a gentle 35°C. This preserves the characteristic and the fresh aromas.
The heritage apple and pear varieties we process are characterised by their fresh acidity and the tartness of tannins. For even more complexity, we work with selected herbs, blossoms and spices. We do not use any added aromas, concentrates or sugar.
 
Aroma: Red berries, refreshingly edgy with a tangy hop aroma.
Taste: striking sweet sour-interplay, tantalising bitter notes with tart accents of the non-alcoholic red wine.
Food pairing: to grilled meats, on its own
